I love this recipe because it's simple and barely processed. I made it last night for dinner and thought it was high time to share the yumminess. Now don't get too excited. "Loaded" does not mean butter, sour cream, and bacon bits in this recipe. It's loaded with fresh vegetables!
- 4 Yukon Gold potatoes, chopped
- 1/2 c green pepper, chopped
- 1/2 c onion, chopped
- 1 c fresh broccoli florets
- 1/4 c olive oil
- 2 Tbsp Season-All
- 2 Tbsp garlic powder
- 1 Tbsp dried thyme
Place all vegetables in a 9x13 baking dish. Drizzle with olive oil. Sprinkle Season-All, garlic powder, and thyme over chopped vegetables. Toss to coat. Cover dish with foil and place in a 375 degree oven for 45 minutes.
You can add cooked chicken and/or top with cheddar cheese. Return to oven until heated through.
Top with fresh salsa and enjoy! Serves 4.
Of course, you can add more or swap for other vegetables and you can use different potatoes. Let me know what you think of it or what changes you made to make it your own.
